Ingredients
- 2 tablespoons canola oil (365 Whole Foods Market)
- 1/2 cup organic popcorn kernels (365 Whole Foods Market)
- 4 tablespoons Earth Balance butter (Earth Balance)
- 1/2 cup Organic Maple Syrup (365 Whole Foods Market)
- 1/2 teaspoon Himalayan salt
- 1/4 teaspoon baking soda (365 Whole Foods Market)
Steps:
1) Pour oil into a heavy bottom pot with lid and add one kernel to oil
2) Heat until hot (when test kernel pops)
3) Add kernels, cover pot with lid, and then swirl pot to cover kernels with heated oil
4) Continuously shake pot and occasionally tilt the lid to allow steam to escape until all kernels have popped
5) Place popped kernels into a large bowl and set aside
6) In a pot, add maple syrup and Earth Balance butter and boil until mixture reaches 225 degrees F on a candy thermometer
7) Remove from heat, add salt and baking soda, and stir
8) Quickly pour mixture on popcorn and stir to fully coat
9) Place coated popcorn (one flat layer) on the a 9 X 12 cookie sheet lined with wax paper
10) Bake at 245 degrees F for 40 minutes, stirring once in the middle of baking
