- 1/2 cup of Earth Balance dairy-free butter
- 1/3 cup of organic sugar
- 2/3 cup of organic brown sugar
- 1 egg
- 2 tbsp. of vanilla extract (365 Whole Foods Market)
- ¾ cup of flour
- ½ tsp of baking soda
- 1 ½ cup of crushed graham crackers (365 Whole Foods Market Graham Crackers)
- ¾ cup of chocolate chips (Enjoy Life semi-sweet mega chunks)
Vegan marshmallow cream (Dandies)
(Makes 12-16 cookies)
1) Preheat Oven to 350°F.
2) In a mixer, combine butter, sugar, and brown sugar and mix until smooth.
3) Add egg and vanilla extract and mix.
4) In a separate bowl, combine flour, baking soda, and crushed graham crackers and stir together.
5) Add combined flour, baking soda, and crushed graham crackers to ingredients in the mixer and mix for a few minutes until smooth
6) While mixing, gradually add chocolate chips.
7) Once mixing is complete, scoop cookie dough (about 1” diameter), place on baking sheet, and press lightly to flatten. (about 6-8 cookies per sheet)
8) Bake for about 10 minutes.
9) Let cookies cool.
10) Once cookies have cooled, take a cookie and smear marshmallow cream on the bottom of the cookie.
11) Place another cookie on marshmallow cream to make a cookie sandwich.
12) Melt extra chocolate chips and drizzle over the top of cookie sandwich.
