Ingredients:
- 1 1/2 cups all-purpose flour (365 Whole Foods Market)
- 3 1/2 teaspoons baking powder (365 Whole Foods Market)
- 1 tablespoon Organic Cane Sugar (365 Whole Foods Market)
- 1/4 teaspoon Himalayan salt, or more to taste
- 1 1/4 cup Oatly Oat Milk (Oatly)
- 3 tablespoons Earth Balance Original Buttery Spread, melted (Earth Balance)
- 1 egg (Pete & Gerry's)
- Garnish w/ Organic Maple Syrup (365 Whole Foods Market), Strawberry Compote, and/or Blueberry Compote
Steps
1) Sift flour, and mix with baking powder, sugar, and salt together in a large bowl
2) Melt butter in small sauce pan
3) Make a well in the center of the bowl and add oat milk, melted Earth Balance butter, and egg
4) Mix until smooth with electric mixer
5) Heat a lightly oiled griddle or pan over medium heat (see below for the pancake pan we used)
6) Pour or scoop the batter onto the griddle
7) Cook until bubbles form about 2 to 3 minutes then flip and cook until browned on the other side
8) Repeat with remaining batter
9) Garnish with toppings
